A Housewife’s Tale episode 114

A very very late update since Week 115 is coming up shortly. It has been a crazy few weeks, we got back from Vegas only to take off for Mexico 6 days after. Spent about 5.5 days in Mexico and now Meep has taken off to Seattle for a Supercomputer/SuperGeek conference for work, which leaves me lotsa time to sort Mexico photos and update the blog~

Now for the menu recap:

Sunday – Our short 48 hours in Vegas ended with having a quick snack at the Planet Hollywood pool

followed by late lunch at Cafe Bellagio w Cuz Christine & Moe.

Dinner was some instant noodles since we barely had any food in the fridge.

Monday – Dinner was some rotiserrie chicken. I don’t have much selection of produce or meats in my fridge so getting chicken from Safeway was the best option~ Served with some white rice.

Tuesday – Bought some groceries when we got back from Vegas at the 24 hour safeway~ There was a sale on Portobello Mushrooms so I had to think of ways to use it. Ended up stuffing it with italian sausage, roasting in the oven and then served with a simple pasta in tomato sauce.

Wednesday – Lu and I were talking bout curries all night on MSN and gave me major curry craving. Thanks to mom who sent me a whole box of instant curry pastes, tom yum soups, prawn noodles and laksa from Brunei… I was able to make awesome chicken curry with just some of the mix, coconut milk and chicken!

Thursday – We had leftover curry for dinner, which worked out well since I did not want any leftovers or too much groceries left sitting in our fridge while we are away.

Friday – Had a frustrating day… Dealt with Delta Sirlines for a couple hours, after finding out the flight to Puerto Vallarta from Salt Lake City has been rescheduled and instead of flying from San Jose to Salty Lake and to Mexico on the same day; we were gonna have to spend one night in Salt Lake City. Arghhh… Ended up changing our flight out of SJC to Saturday… We lost 24 hours in Mexico and I had to call up the tour companies and sort out our reservations. I was obviously not happy so Meep suggested just going out for dinner.

Saturday – Left home at about 3.45 am to the airport!! I was tired but darn excited. We had breakfast at Wolfgang’s Express in Salt Lake City airport. Breakfast pizza that was not too bad~

First dinner in Puerto Vallarta turned out to be at the Marina. Were suppose to meet up w Meep’s uncle & cousin for dinner but due to some miscommunication, we had dinner ourselves. Our experience w the locals were great on the first day (from the moment we arrived).

Got my passport stamped with no issues (it is challenging w a Bruneian passport to travel since most don’t know the country) by a friendly Immigration officer who joked that we should make a Mexican baby while we are there. While walking around the Marina, the same immigration officer recognised me and called out to me. I didn’t recognise him outside his uniform so it was awkward for the first 10 secs!! He recommended Buenos Aires for dinner, so we just had to try it.

I can’t wait to do a write up on the food we have eaten in Mexico. There was a whole lotta eating, so be prepared!!
