A Housewife’s Tale episode 115

With 80% of the week in Puerto Vallarta, it took me forever to sort the pictures for this entry~ I totally went overboard with about 1900 photos in our short 5 days in Mexico!!! Well, my backup camera was with SIL #2 who took a good amount of photos during the wedding (I am not THAT snap happy). Lotsa good food and fun experiences so here goes:

Sunday – Went on a fun filled Taco Tour around Old Town Puerto Vallarta. Sooo much fun and so much good food!!

And swam w dolphins for about 45 mins!!! Best time spent in a pool~

Dinner was at Eddie’s in the Nuevo Vallarta Marina. Even met the owner who was quite a personable old gentleman (named Eddie) from California!

After dinner we visited the family who were all staying at the Riu Palace. After the short visit, we had some dessert at Rouge back at the Mayan Resorts. We were pleasantly surprised by how amazing the food was.

Monday – Spent the first 7 hours on a Outdoor excursion! Ziplining through canopies; rappelling down waterfalls, riding on mules was sooo much fun!!!

For dinner, we went on the highly recommended Rhythm of the Nights tour that takes us out during sunset on an hr catamaran rice to a romantic island all lit up w candles and flames. Ate right on the beach; hung out in a hammock and ended the night with a traditional Mayan show.

Tuesday – My youngest SIL’s long awaited wedding day!!! Her and her favourite S looked great and it was a beautiful ceremony and even better reception. Sooo much fun~ First had breakfast at our hotel;

Then lunch w the family at their resort (Riu Palace)

Wednesday – Went on a 8 hour excursion and it was fun! Stopped by lotsa little towns along the Sierra Madre (North of PV) and had the best taco in my life! The tortilla was nothing like the ones I have had and Pachita (the lady whose home we visited) was churning them out like a well oiled machine. Even the guacamole and salsa were the BEST!!

Oh and HAPPPY ANNIVERSARY to Meep and myself!! We had our romantic dinner early (on Monday) but on this actual day, we had dinner by the beach on our hotel grounds. It didnt start well (gross appy) but the mains and desserts were surprisingly tasty~

Thursday – Time to head back to San Jose! I was totally reluctant to leave PV, the trip was way too short!! Had some Carls’ Junior at the Puerto Vallarta airport.

Dinner was instant noodles since we didn’t get home till a little before midnight~

Friday – We picked up a whole crap load of groceries since I needed quick and easy meals for the next few weeks. Picked up box of the Safeway’s fried chicken. We had that for dinner with a fried egg over rice.

Saturday – Korean beef short ribs for late lunch/early dinner along with kimchi fried rice!!!

Meep is taking off for a full week to Seattle/Vancouver so I prolly won’t be cooking much!! Starting a new Part time job as well, and training will be full time for two weeks so errrr….. Wish me luck!!!
