Christmas Day at Home

I am definitely setting a record with Christmas dinners this year~ This is the fifth Christmas dinner and I can’t even keep track of what I have already posted. So Meep and I had a dinner, then I had one with the ladies, one with B&B, one w Meep and the family (courtesy of Meep and JJ), another one at home and one more coming up! Before I lose track, here is the recap of Christmas Day dinner at home.

MIL and JJ went out and got a nice 10lb Prime Rib Roast, which we thought was gonna be a major challenge to prepare but I think we nailed it!!

JJ and I were researching methods of preparing prime rib as neither of us have ever prepared a prime rib. We ended up roasting the beef at 500F for 37 minutes and then turned off the oven and left the rib to continue cooking in the warm oven for 1 hour and 45 minutes.

After a couple hours of bustling around, it was the nerve wrecking moment of truth: Is the prime rib cooked? (the oven had no lights so this hunk of meat had been sitting in the oven that was turned off after only 37 minutes at 500F. JJ and I were crossing our fingers coz we could potentially ruin Christmas dinner for everyone)

It is cooked!!! It looked good….

Nice medium rare in the centre and rare close to the bones. Our rib slicing skills left little to be desired. 😛

The rest of the sides were: Mashed potatoes, Sweet Potatoes, Brussel sprouts and garlic sausage, garlic asparagus and steamed asparagus.

And the night ended with a bang – Presents from the parents for all of us.
