You will need:
4-5 boneless chicken thighs
3 tablespoons minced lemongrass/ 3 stalks (only the white section)
2 tablespoons brown sugar
2 tablespoons fish sauce
1 teaspoon black pepper
3 cloves minced garlic
3 shallots (minced)
2 tablespoons sesame oil
1 tablespoon light soy
1 tablespoons thick sweet soy sauce

Note: You can use fresh stalks or buy the minced version, usually in freezer section.

Step 1 : Deboned chicken thighs (if you did not buy boneless)
Step 2: Mix all the ingredients above
Step 3: Mix marinade into chicken well
Step 4: Marinate for 3-6 hours
Step 5: Grill~ (or pan fry for about 4 minutes on each side and finish off in 475F oven that is set of broil/grill)
Serve chicken with white rice, some shredded lettuce & tomato slices and fish sauce.
To make the fish Sauce (I use the same sauce for my springrolls):
3 cloves garlic (minced)
2 thai bird’s eye chili (minced, I take out the seeds coz I can’t take spicy stuffs too well)
1 lime (squeezed for juice).
1 medium carrot grated
2 tablespoon sugar dissolved in 1 cup warm water
~ 2 tablespoon fish sauce (but keep adding till you get your desired taste… I used about 3 tablespoon)
Mix everything, adjust seasonings to sauce the way you would like~
